Today we’re going on a Japanese food tour to try some of the most popular noodles dishes. #1 Hakata Ramen (Tonkotsu) - There’s no doubt this is one of the most important noodles dishes of Fukuoka, and one of the most famous versions of ramen in Japan - tonkotsu ramen or locally known as Hakata ramen. We went to an old school spot that hasn’t changed in decades. It was one of the best bowls of tonkotsu ramen I’ve ever had. Hakuryuken 🤍 Price - 1,150 JPY ($8.68) #2 Udon - Next up for udon, another Japanese noodle classic. Udon is thick and hearty. We went to a very well known udon restaurant in Fukuoka, and actually you can order from three different sizes, yet they each cost the same amount, and depending on hours (in the afternoon when we came), you can get unlimited re-fills of noodles - so it’s all you can eat udon! I had the hugest bowl possible and it was at least three normal bowls of udon. I was pretty full after eating it all so I didn’t need more! Shungetsuan Shotenjimae: 🤍 Price - 800 JPY ($6.04 all you can eat udon noodles) #3 Champon - The last dish is champon, especially famous from Nagasaki, south of Fukuoka on Kyushu island. It’s a totally different noodle dish concept where a heap of vegetables are stir fried and then topped like a mountain on top of noodles with thick pork bone broth. It looks huge, but goes down quite easily as it mainly consists of bean sprouts and cabbage. This is that real deal, traditional tonkotsu ramen. A lot of people wonder how to get a proper rich and creamy tonkotsu broth like so many ramen shops do. This guide/recipe will show you how to do just that. Of course I also included how to make chashu, and nice jammy soft boiled eggs. I was originally going to upload those as individual videos, but then decided to just have every component made in this video. From what I've heard, a lot of ramen shops will actually boil their bones for over 14-24 hours, but this recipe still makes a beautiful broth just at 12 hours. A rich, fatty tonkotsu ramen is something special. It's not like anything else in this world. And in my humble opinion, the broth is the true star. The reality is that, assuming you have the proper components, the true main ingredient in a rich and creamy tonkotsu broth is time. Consisting of an umami rich broth, boosted by a dashi-based tare, chashu pork belly, soft boiled eggs, hand-made ramen noodles (be careful not to burn your hands), and any toppings you'd like, ramen is truly one of the most delicious things on earth. This ingredient list may scare you, but at the very least, if you make anything at all here, make the broth, dashi, and tare. It will blow your mind. I promise. Second, pour the broth in and add noodles in the bowl. Add in the flavored oil, wagyu steak, sukiyaki meat, naganegi, white asparagus, half of seasoned egg in the bowl. Then, add some truffle oil on the beef.
